Saffron is a wonderful spice. Already the sound of its name promises us oriental pleasures. The term itself comes from Arabic-Persian and means “the yellow”. If we look closely, we can see how strongly crocin, the carotenoid ingredient of saffron threads, colours the food yellow.

Saffron has been cultivated in Iran for thousands of years. Today, most of the world production is processed here. At the same time, Iranian saffron products are of the best quality in the world. While saffron threads and saffron powder used to be widely used for healing and as a dye, saffron is nowadays used more in the kitchen. Huge areas of land are needed to collect only a few kilograms.

It should not be cooked for a long time, usually it is simply sprinkled over the food towards the end of the cooking time and only heated briefly. The intense colour of the threads and the somewhat tart and spicy taste give the dish a special touch.
